- Clean chicory by cutting the root section and taking away yellow or old leaves
- Boil in hot water chicory leaves for 5 minutes.
- Drain it and set aside.
- In a casserole pour oil and fry slightly chopped onion and add chily paste or "Nduja"
- Add boiled chicory and keep cooking for about 20 minutes, till soft.
- Adjust with salt and pepper to taste. Or use 1 teaspoon of homemade "stock cube"
