- Slice the all cabbage removing core and external hard leaves
- Put it in a big salad bowl. Sprinkle with salt and vinegar. Mix well with your hands.
- Leave it for fiew hours. Or just overnight
- Drain it well in a colander.
- Sterilize some glass jars in a microwave for 5 minutes. Put half a clove of garlic at the bottom and start fill it with cabbage. Insert another half garlic, press well and start pour oil in the jar. Ler all the air to come out and keep pressing the cabbage and fill with oil to the top.
- Close jars and store in the fridge.
Notes
Start to consume after fiew days, with grilled bread or in salads.
It goes very well with hummus

200 g chickpeas (boiled)

2 tbsp sesame paste (or tahini sauce)

1 garlic (clove finely chopped)

1 lemon (squeezed)

1 pinches salt & pepper

1 pinches chili pepper powder

In a blender or food processor, put the chickpeas and reduce in cream

Add all other ingredients and mix well.
Taste it and adjust to your own taste. -
Keep in fridge and serve in nice bowls.
