- for bechamel
- put the cauliflower tops in salted boiling water for 10 min (or until soft for a fork)
- In a pan melt the butter with the flour wisking well and let it fry for fiew minutes. When it start to change colour to light brown, take the pan off the heat and add a small amount of milk, wisk well with no lumps. Add some more milk and wisk again. When the butter and flour dough is tourned to a fluid mix, add the remaining milk. Add salt pepper and nutmeg. Put the pan back on heat and let it boil for fiew minutes.
- Put the cauliflower in a baking tray, lay over it the sliced cheddar and the bechamel. Put the speck or bacon on top.
- Under hoven grill till nicely grilled.
